Ingredients

Main Ingredients

  • 120 g Blue Tribe Tandoori Soya Chaap
  • 1 cup Cooked Millet (Foxtail, Little Millet or Barnyard Millet)
  • 30 g Broccoli Florets
  • 30 g Bell Peppers (Red, Yellow & Green)
  • 20 g Zucchini (Diced)
  • 20 g Onion (Sliced)
  • 2 tbsp Boiled Chickpeas
  • 2 tbsp Hung Curd (or Greek Yogurt)
  • 1 tbsp Fresh Mint Chutney
  • 1 tsp Lemon Juice
  • 1 tsp Olive Oil
  • Salt & Black Pepper to taste

  • Cherry Tomatoes
  • Cucumber
  • Avocado
  • Roasted Pumpkin Seeds
  • Sunflower Seeds
  • Microgreens
  • Fresh Coriander
  • Fresh Mint Leaves

Step-by-Step Recipe

Step 1: Prepare the Millet

Cook your preferred millet according to package instructions until soft yet fluffy.

Allow it to cool slightly before assembling the bowl.

Tip: Foxtail Millet, Little Millet, or Barnyard Millet work beautifully in this recipe.


Step 2: Heat the Tandoori Soya Chaap

Heat a teaspoon of olive oil in a non-stick pan over medium heat.

Cook the Blue Tribe Tandoori Soya Chaap for 3–4 minutes, turning occasionally until evenly heated and lightly charred.

Slice into bite-sized pieces if required.


Step 3: Sauté the Vegetables

Using the same pan, lightly sauté:

  • Broccoli
  • Bell Peppers
  • Zucchini
  • Onion

Cook for 2–3 minutes to retain their crunch and vibrant colour.

Season with a pinch of salt and black pepper.


Step 4: Prepare the Dressing

In a small bowl, combine:

  • Hung Curd
  • Fresh Mint Chutney
  • Lemon Juice

Whisk until smooth and creamy.

Adjust seasoning if needed.


Step 5: Assemble the Power Bowl

Start by adding the cooked millet as the base.

Arrange around it:

  • Tandoori Soya Chaap
  • Sautéed vegetables
  • Boiled chickpeas

Drizzle the mint yogurt dressing generously over the bowl.


Step 6: Garnish

Finish with:

  • Fresh mint leaves
  • Lemon wedge
  • Roasted pumpkin seeds
  • Sunflower seeds
  • Freshly cracked black pepper

Serve immediately.
